MANGOES                                         

A variety of mangoes picked fresh from my trees are used in my recipes      
to bake Tweedle's treats:  Nam Doc Mai,  Glenn,  Julie,  Haden, Siagon,
Kent, Phillippine, Popyu Kalay and Tommy Atkins. Each type of mango
adds their unique flavor. No Pesticides are used on my trees.

Mangoes contain vitamins, minerals, and are a rich source of vitamin A   
(beta-carotene E, selenium, iron, vitamin C and potassium.  Mangoes

ORGANIC CINNAMON

Organic Cinnamon is the brown bark of the Cinnamon tree, and one of the oldest
spices known. It was mentioned in the bible and was used in ancient Egypt
not only as a beverage flavoring and medicine, but also as an embalming agent.
It is an excellent source of the trace minerals manganese, and a very good  
source of dietary fiber, iron and calcium.

Cinnamon's antimicrobial properties are so effective that recent research
demonstrates this spice can be used as an alternative to traditional food
preservatives.


                        
                 A PINCH OF NUTMEG

During the 15th - 17th centuries the history of nutmeg tells us that nutmeg
was  extremely popular. Dogs and humans find it’s aromatic scent coupled with
it’s delicious flavor is intriguing to those discovering it. The Chinese are mostly
responsible for our current knowledge of nutmeg medicinal properties. nutmeg
was  familiar to Byzantine traders who purchased it from Arabs. This may be
where Nutmeg got its name, as it may have been called “mesk’ in Arabian, and  
translated into the French ‘noix muguette’ and then into ‘nut meg’ by the English.

Nutmeg has anti-inflammatory properties and has a variety of health benefits
It has been used as a healing herb for humans for many centuries, and has
been known to help soothe a stomach ache as well as stop diarreah. It can also
be used to treat joint and muscle pain., and the oil in nutmeg works well when
used in massage.

ORGANIC  ROSEMARY AND VITAMIN E MIXED TOCOPHERLS
                                   Natural Preservatives

Organic Rosemary is also thought to have anti-inflammatory properties. It’s been
used medicinally through the ages to promote health digestion and good immune
function in humans. It is known to have up to two dozen different anti-oxidants
present  within its stalks.

Natural preservatives are becoming more common in pet foods, in response to
concerns many owners have about the synthetic preservatives. Mixed tocopherols
and antioxidants are very effective, Rosemary is used as a natural preservative.

The name "rosemary" is derived from the Latin "Ros Marinus," meaning "dew of
the sea." This aromatic herb has made itself useful throughout history for both  
seasonings and rituals.

Natural preservatives are now found in better pet foods are antioxidants like
vitamin E  (usually listed as "mixed tocopherols"), vitamin C and rosemary extract.  
Natural preservatives are very effective, but have a shorter shelf life; and once
opened, the bag should be used within a month or kept in the freezer to preserve
freshness.
                                   WARNING!
The most common synthetic preservatives are BHT, BHA and ethoxyquin. BHT and
BHA are also used  to  stabilize  rubber  products, like  tires, to keep  them  supple,
and as herbicides. These are also effective preservatives and keep kibble and treats
from spoiling almost indefinitely. Natural preservatives now found in better pet foods
are antioxidants like vitamin E (usually listed as "mixed tocopherols"), vitamin C and
rosemary extract.

BHT and BHA are known carcinogens. However, the FDA allows for low levels of
these synthetic preservatives in both pet and human food and they are GRAS (generally
known as safe) in small amounts. Ethoxyquin, while widely used, is still being studied.

Some research has shown that it may compromise liver function in dogs, and in 1997
the FDA recommended that the allowed limit in pet foods be lowered. Some feel that
the standards are still too lax and ethoxyquin should not be used at all. It is in very   
limited use in human foods. People do not eat food laced with ethoxyquin, BHT and
BHA at every meal, unlike kibble-fed dogs and cats, and this has raised concerns.

Preservatives are necessary in commercial pet foods, primarily to prevent the fats
from  turning rancid and to inhibit mold growth. Synthetic preservatives have been
used  for many years, but concerns about the potential harm in feeding chemical
preservatives with every meal have encouraged the pet food industry to turn to
more natural preservatives.
               
                        A Pinch of Anhydrous Citric  Acid

Anhydrous Fine granular citric acid is a natural preservative and exists in a variety
of fruits and vegetables, but it is most concentrated in lemons and limes.The discovery
of citric acid has been credited to the 8th century alchemist Jabir Ibn Hayyan (Geber).

Vitamin C is one of the most important anti-oxidants, and is also used as a natural  
preservative. Vitamin C is used for overall health and stress.


        ORGANIC UNSULPHURED BLACKSTRAP MOLASSES

Blackstrap molasses is a sweetener that is actually beneficial.  Unlike refined White
sugar and corn syrup, which are stripped of virtually all nutrients except simple
carbohydrates. It is a very good source of iron, calcium,and an excellent source of
copper, manganese, potassium, and magnesium.

Molasses has been imported into the United States from the Caribbean Islands since the
time of the early colonists. In fact, it was the most popular sweetener used until the late
19th century since it was much more affordable than refined sugar, which was very
expensive at that time. Blackstrap molasses gained in popularity in the mid-20th century
with the advent of the health food movement. Today, the largest producers of molasses
are India, Brazil, Taiwan, Thailand, the Phillipines and the United States.


                      Organic Wildflower Amber Honey

Honey contains enzymes such as invertase, diastase, catalase and inulase,
which are aids to digestion and assimilation. It has all the B-complex vitamins,
vitamin C, D, E, amino acids (great protein builders), proteins, plant pigments,
aromatic compounds, healthful acids: acetic, citric, formic, malic, succinic.
It contains simples sugars as glucose (also known as dextrose or grape sugar,
the most basic sugar that directly goes into the blood stream without need of
digestion), fructose (or levulose which is fruit sugar that is easily assimilated
by the body), and small amounts of sucrose, dextrin, maltose and many minerals
such as silica, iron, copper, manganese, chlorine, calcium, potassium, phosphorus,
sulfur, and magnesium, and it contains some water.

     SWEET POTATOES

Sweet Potatoes contain an excellent source of Vitamin A (in the form of beta-carotene),
Vitamin C, manganese, fiber, Vitamin  B6 (pyridoxine), potassium, iron, copper,and anti-
oxidants.  Sweet potatoes have healing properties known as an anti-inflammatory
antioxidant food. Dogs love the sweet taste. There are approximately 400 varieties.

There is often much confusion between sweet potatoes and yams; the moist-fleshed,
orange-colored root vegetable that is often called a "yam" is actually a sweet potato.
The intensity of the sweet potato's yellow or orange flesh color is directly correlated to
its beta-carotene content.

Sweet potatoes are native to Central America and are one of the oldest vegetables
known to man. They have been consumed since prehistoric times as evidenced by
sweet potato relics dating back 10,000 years, discovered in Peruvian caves.
Christopher Columbus brought sweet potatoes back to Europe after his first voyage to
the New World in 1492. By the 16th century, they were brought to the Philippines by
Spanish explorers and to Africa, India, Indonesia and southern Asia by the Portuguese.
Around this same time, sweet potatoes began to be cultivated in the southern USA.

Garlic is a member of the lily family, is reputed to have medicinal qualities.   
It is a natural anti-bacterial and a blood-thinning agent that reportedly can
improve circulation.  

Garlic for dogs is reputed to be a natural flea remedy.  As with most things,
moderation is the key particularly in small dogs
.

          ORGANIC ROLLED OATS

Oats are an excellent source of nutrients; manganese, thiamine (B10), iron,
dietary fiber, and selenium, which is a necessary cofactor of the important  
antioxidant, glutathione peroxidase, and works with vitamin E in numerous
vital antioxidant systems throughout the body.

Oats also contain phosphorus, tryptophan, and are a rich source of magnesium,
a mineral that acts as a co-factor for more than 300 enzymes, including  
enzymes involved in the body's use of glucose and insulin secretion.


                                 ORGANIC FLAXSEED

Flaxseed is a rich source of natural Omega- 3 essential fatty acids and is
excellent for your dog's skin and coat.  It has been around for more than
4,000 years, and  was known even in the days of Hippocrates for its
healthful benefits.

Flaxseed has been a part of human and animal diets for thousands of years
in Asia, Europe, and Africa, and more recently in North America and Australia,
says Kaye Effertz, executive director of AmeriFlax, a trade promotion group  
representing U.S. flaxseed producers.


                         
              ORGANIC SESAME SEED

Sesame seeds may be the oldest condiment known to man dating back to as
early as 1600 BC. They are highly valued for their oil which is exceptionally
resistant to rancidity.

Organic Sesame seeds have a nutty taste and are not only a very good source of
manganese and copper, but they are also a good source of calcium, magnesium,
iron, phosphorus, vitamin B1, zinc and dietary fiber. In addition to these important nutrients,
sesame seeds contain two unique substances: sesamin and sesamolin.
Both of these substances belong to a group of special beneficial fibers called
lignans, and have been shown to have a cholesterol-lowering effect in humans,
and to prevent high blood pressure and increase vitamin E supplies in animals.


                                     ORGANIC MILLET

Organic Millet is a good source of magnesium, calcium, manganese, phosphorus,
tryptophan, fiber, B vitamins, and Antioxidants.

Traced back to its origin in China, millet has been used throughout the ages and
across many countries. For centuries millet has been a prized crop in China, India,
Greece, Africa.  Millet is even mentioned as a treasured crop in the Bible.

This tiny "grain" is gluten-free and packed with vitamins and minerals. In fact, while
it's often called a grain because of it's grain-like consistency,
millet is actually a seed.
It's often used in birdseed mixture, but it's not just beneficial for birds.


            ORGANIC BROWN RICE AND BROWN RICE FLOUR

Nutty tasting brown rice is the whole kernel, higher in fiber, vitamins and minerals than white rice, and it
is gluten free. It is an excellent source of manganese, and a good source of the minerals selenium and
magnesium. The complete milling and polishing that converts brown rice into white rice destroys 67% of
the vitamin B3, 80% of the vitamin B1, 90% of the vitamin B6, half of the manganese, half of the
phosphorus, 60% of the iron, and all of the dietary fiber and essential fatty acids. By law in the United
States, fully milled and polished white rice must be "enriched" with vitamins B1, B3, and iron. But the
form of these nutrients when added back into the processed rice is not the same as in the original
unprocessed version, and at least 11 lost nutrients are not replaced in any form even with rice
"enrichment."

The difference between brown rice and white rice is not just color! A whole grain of rice has several
layers. Only the outermost layer, the hull, is removed to produce what we call brown rice. This process is
the least damaging to the nutritional value of the rice and avoids the unnecessary loss of nutrients that
occurs with further processing. If brown rice is further milled to remove the bran and most of the germ
layer, the result is a whiter rice, but also a rice that has lost many more nutrients. At this point, however,
the rice is still unpolished, and it takes polishing to produce the white rice we are used to seeing.
Polishing removes the aleurone layer of the grain-a layer filled with health-supportive, essential fats.
Because these fats, once exposed to air by the refining process, are highly susceptible to oxidation, this
layer is removed to extend the shelf life of the product. The resulting white rice is simply a refined starch
that is largely bereft of its original nutrients.

                    
                               TAPIOCA STARCH
Tapioca starch is also known as tapioca flour, is ground to a powdery fine granulation from the dried
roots of the sassava plant. It is a starchy and slightly sweet flour that is especially good for thickening
foods such as fillings, sauces, fillings, etc. Tapioca starch is also an excellent ingredient for GLUTEN-FREE
baking, as it promotes browning and makes crispy crusts
